Thats to be expected form an anole, they aren't domesticated like dogs and cats. The only thing you could do is drop the temperature slightly in the vivarium, as this would lower his metabolism, but in the interests of the anoles health, and safety, i would not recommend this. I also suggest that you do not hold the anole unless he is calm or unless its absolutely necessary, as this could lead to stress and injury.

I have had 2 anoles in an aquarium in my classroom for the last 15 years(not the same ones). I do not let my students hold them (too delicate) but when I retrieve one, I hold it carefully just north of its back legs, and it flops back and forth quickly for about 5 seconds, then settles down and gradually turns green, eyes turn blue, and it will rest, calmly on my hand, close its eyes, and even lick water droplets from my fingers.
One of mine has regenerated about an inch and a half of its tail, even though the tail's color stays about a dark grayish color. Contrary to the answer above, I have always had 2 males...it seems the females are never in our pet stores or I would have bought one. The males get along fine. I've never seen them really fight, though occasionally one's red dewlap sticks out when I take him out of the cage or he gets in a row with the other.
