What Is Gluten?

I believe it is a wheat and yeast found in some foods i am and interested infinding out moreaboutit becauseI would LIke to try a gluten free diet on my 10 year old that has adhd but really do not knowwheretostart any advise helps

    Gluten is basically a mixture of two types of proteins called Gliadin and Glutenin, which are present in wheat, rye, barley etc. Normally a gluten free diet is alternative grains and starch sources such as maize, rice, potatoes etc. For more information on food sources that do not contain gluten, see the link below:

      Gluten is a protein in grains that some people are not able to break down.  A gluten-free diet is free of wheat, barley, rye, and oats (unless they are gf oats).  A great book that helped me a lot was Gluten-Free for Dummies.  Had great explanations and helped a lot on substitutions.  
      TACA and DAN have info on the gluten-free, casein-free diets & autism.  Good Luck Jessica
