You would be very lucky to be able to work in all of these countries as a lawyer, for the reason that at least two of them operate their legal systems in a completely different language.
You would be best to study international law, as a post grad, or international relations within the area of diplomatic law. Human rights law is another specialisation.Immigration specialization may suit you too.
You should speak to the student office or a professor at the university you plan on attending, to get the best information about what you can do, and what is actually on offer.
You should really be aware that all of these countries have very different legal systems and the general trend at least in most of them, is to study in that system, do your articles, and bar exam and then work within that system to perfect your skills and get to know the ins and outs of that particular system. Jumping between all four would be challenging indeed, and could really only happen if you were an expert later on in your career, and consulting on a particular common area within all the systems.
Please be aware that however much the word global is thrown around, the legal systems of Italy and Greece are conducted entirely in either Italian or Greek, and few people speak enough English to manage at anything other than a basic level. So unless you plan to be proficient in these two languages first, or one is your mother tongue, I would be concerned about that.
