What your hamster is doing is a natural act. Don't try to train it to be something it is not. It is an animal after all and it is quite natural for hamsters to bite.

If you want to train your hamster to be held by people and be friendly. Put an empty roll of toilet paper in the cage - the hamster will crawl in it (they love tubes) and then just pick of the tube and "pour" him into your hand - once you have him in your hand he should not bite but he will be squirmy so be careful not to drop him.

They bite from lack of socialization. They have learned that if they bite you put them down and leave them alone, so they keep doing it. Is it a hard bite or just a nip? If a nip, it may just mean its had enough attention.
