It depends on why it is freezing, but holding down both Menu and OK (or Play and OK, can't remember which) forces it to restart. This is on the click-wheel ipods (white wheel with a large grey button in the middle). If you have a differently controlled ipod, go into google and type "How to restart my <ipod model here>" for example: "How to restart my ipod touch".

Click menu with one finger , then pause with a different finger and hold them both down for about 10 seconds, after it shuts down, then turn on like normal & enjoy!!
