If you want simple, Bisquick is a good way to go.
1 1/4 cups Bisquick
1/4 softened butter or margarine
2 Tablespoons boiling water.
Mix butter and Bisquick till well blended. Add water and mix briskly to for a soft dough.
Use cooking spray or rub butter/margarine into 9" pie pan.
Then you can just press the mix to cover the pie pan.
BTW bisquick makes great dumplings
