    Wine, which has an alcohol concentration of between eight and twelve per cent v/v and high acidity, is boiled in a still pot. The vapours of ethanol, water and the various aromatic components rise. They are collected in a condenser coil and turn into a liquid.

    The condensed product is called the distillate, and it contains more alcohol than that of the original wine. The alcohol content in the distillate is approximately 82 per cent by volume.

    The alcohol is removed from the wine resulting in a drop in its alcohol content. This, in turn, reduces the alcohol content of the distillate. This distillate eventually contains no alcohol and has the same boiling point as that of water, that is 100 degrees Celsius. The accumulated distillate contains about 30 per cent of ethanol by volume.
