African Grey's can't talk. They mimic. If you want her to talk, you have to put in the hours. She's proven she can do it by mimicking sounds like the phone so all you have to do now is repeat phrases you want her to mimic over and over again... She'll get it soon enough. But be careful what you teach her :-).

Chilledpip is right. Your bird doesn't up and go, oh, this is your language, now we'll start having in depth conversations. Birds are intelligent, but the type of language we possess is too abstract for most animals. You can teach your bird to mimck you, train him to say certain things at certain times (You: "Honey, I'm home!" Bird: "I've got a meatloaf in the oven!") and even teach them to ask for things (Grape, seed, water, ball, etc.), but that is quite advanced.

African Grays can talk. They have a voice box just like us. I believe if you work with her she will talk.
