How Do You Fry So That It Is Crispy Not Soggy?

Made corn fritters....tasted good, looked good but lacked the crunch i was hoping for.

    Well i can give you two good tips to make corn fritters very crunchy. First of all, make sure that you drain all water out of the corns in the beginning. Dry them to the fullest. Then keep the oil hot/warm to get the maximum crunch. Don't let it be cool at any point of time while frying the fritters.

      You should always preheat the oil before you begin to fry. Once you have started frying you should let it cook well on the first side before turning it over. Once the food is cooked to your desire it is important to remove the food from the pan while it's still on. I've noticed that if you turn the heat down or off before taking the food out it will soak up the oil while it's cooling. Good luck.
