I too am lactose intolerant but find that when I bake using milk it doesn't usually bother me.
If husband is that intolerant though, I would recommend trying one of the other milks available -- soy or rice. You may also want to try substituting apple juice, if that is palatable to your husband. You could also substitute apple sauce for the liquid. Good luck and please let me know what you decide to do.
