    There are many different varieties of mushroom, but lal of them have one thing in common - they are all richer and more nutritious than any other food in the immune-boosting antioxident, ergothionene. Even your common-old white button mushroom that you buy in the supermarket, have 12 times the amount of this antioxidant than wheatgerm, which is the next richest source.
    More exotic mushrooms, such as shiitake and oyster mushrooms, have an even higher level of ergothionene.
    Althought the mushroom is considered a fungi, it will help to ward off colds and other viruses if eaten on a regular basis and as part of a healthy diet. Accordin gto research at the Pennsylvania State University in the United States of America, the mushroom can also potentially lower the risk of some cancers.
    To keep mushrooms fresh and avoid them becoming wet and slimy, you should keep them in a paper bag and store them in the fridge. If you do this, they will keep for about a week.
