What Can You Do With A Red Cabbage?

    Some people don't like cabbage, but this is what some other people do to red cabbage  

    The way the Danes like it:

    1 medium sized red cabbage
    2 medium sized apples
    30 g butter
    6 to 8 tbsp wine vinegar
    6 to 8 tbsp water
    Salt and pepper
    4 tbsp red currant jelly
    1 tbsp sugar

    Method:
    Clean the cabbage and shred using a food processor. Peel and grate the apples. Melt butter in a pot and add the apples and cabbage to it, stir for five minutes and add the vinegar, water, salt and pepper. Cook till cabbage is tender. Add the red currant jelly and sugar and bring to a boil.

    Red Cabbage Soup

    2 cups water
    1 large red onion, diced
    3 cloves garlic, minced
    1 bay leaf
    1 tsp soy sauce
    1/2 t fresh ground pepper
    a pinch of allspice
    a pinch of thyme
    1/8 t liquid smoke
    1 small parsnip, peeled and diced
    1 small carrot, peeled and diced
    1 small stalk celery, diced
    1/2 small head of cabbage, coarsely chopped
    1 small can kidney beans
    1/2 small can tomato paste
    1/4 cup water
    salt to taste

    Boil water and add onions, garlic, soy sauce, bay leaf, pepper, allspice, thyme, and liquid smoke. Add parsnip, carrot and celery. Cook for 30 minutes. Add cabbage and beans, cook till cabbage is tender. Add tomato paste and salt to taste.
