How Do You Make Elder Berry Wine?

    Here's a nice fruity recipe.

    Four and a half cup elderberries ripe
    5 liters of water
    Granulated sugar one and a half kilograms
    One packet of wine yeast
    200 gm raisins
    half a cup lemon juice
    half a cup of orange juice
    one teaspoon of yeast nutrient

    You will need a primary fermentation vessel in which you add boiling water to the chopped raisins, the two juices, yeast nutrient and a vitamin B tablet. Keep stirring this concoction and keep for one day. Now add the sugar and yeast. Leave this to ferment for four days.  
    Strain the liquid in demijohns and top up with sugar and cool boiled water. Leave this to ferment in a cool dark place. Rack off the lees when fermentation has ended and rack again a couple of weeks hence. Finally bottle the contents and let it mature for a year before drinking.
