My general approach to pruning are these steps:

1:Remove any dead or damaged branches.
2:Prune out any crossing branches that may rub against each other in the future.
3:In multi stemmed plants remove those branches that form a "weak crotch" in the tree.  those that could split or gather water in the future in favor of more of a u shaped crotch.
4:Prune back each remaining branches to shape the plant . Always prune to within 1/4" of a lateral but or node that faces away from the trunk.  This will give you a nice wide open canopy in the future.

Many of the Japanese maples have interesting bark which you may want to show off as the tree gets older, don't be afraid to prune to display the trunk. These trees may be pruned at most times of the year as they are not noted for their flowering but try to avoid pruning when the sap is flowing in the spring (sugar season).
