    This depends which colour you want to give to your curry. Different ingredients are used to give different colours to curry. Some are being mentioned below;

    1.To give bright yellow colour use turmeric.
    2.To give pale apricot colour use saffron.
    3.To give reddish brown colour use red chillies.
    4.To give your curry green colour use fresh coriander leave in quantity, it darkens easily with longer cooking.
    5.To give pinkish colour to your curry you can use red tomatoes along with yoghurt, reddish if used on their own.
    6.To make deep brown curry use onions. Fry them until dark brown without adding much water.
    7.Coriander powder fried and fried garam masala powder are also used to give deep brown colour to the curry.

    But all depends upon the choice of the cook, what taste he wants to develop in his dish. The choice of colour could be natural outcome of the dish as well. Secondly, the region matters the most to prefer the taste and colour.

    I hope I have been helpful.
    Happy cooking.
