What Is Turkish Delight?

    In Turkey, the candy is known as rahat loukoum, loosely translated as "rest for the throat". It is also known as lokum in the rest of the world. Turkish delight is usually made from gelatine or cornstarch, honey, sugar, and fruit juice. Rose water is often added along with almonds, hazelnuts, pistachios, and pine nuts, giving it an exotic taste.

    Making Turkish delight is a skill, because getting to set to the right consistency can be a bit tricky. The end product is a very sweet, chewy dessert which is cut into small blocks and dusted with powdered sugar to keep the pieces from sticking together.

    The candies are a favourite for their visual appeal - the blocks, which are sometimes a pinkish tint from the rosewater, are showcased in rows at Middle Eastern confectionary shops.  

    The treat was featured in the book The Lion, the Witch and the Wardrobe. When the movie version recently came out, Turkish Delight enjoyed a resurgence in popularity, especially in the UK.

    Turkish word is Lokum, it orignated from a small shop in Istanbul Haci Bekir which is still there today and was orinally made as a treat for a sultan.
