    Some love their chicken to be really very crisp. The secret of making the skin of a chicken really crispy is to make sure that the chicken is scored in the front and salted heavily. The skin dries up due to this and gives a super crispy chicken. Same ways slit the breasts; apply salt as per your taste and drain all the fat by placing the bird breast down and sticking a fork between the legs while cooking it for three quarters of the time instructed in the recipe. Then use broil on the oven for cooking the breasts during the last ¼. Thus the skin would be crispy while the meat would remain moist.
