Extra-virgin olive oil is produced by first cold-pressing of the olives. It doesn't contain more than 0.8% of acidic properties. It is considered as having the superior taste quality compared to other oils, and hence much more costly than any. It is available in crystalline champagne color to greenish-golden or bright green. Usually the intensity of the olive flavour can be identified by the density of its color. It doesn't contain any refined oil in it. It tastes great with salads, dressings or vinaigrettes. It will create a tempting effect on your taste-buds if you drizzle over crusty bread or sandwiches. It can also be used in brushing the fish or meat before serving.
