What a great idea. I suppose the important thing here is that you actually care what your staff think, most managers wouldn't give two hoots and carry on as if they know everything about what customers might want.
How about asking your staff to dream up some brand new cocktails? Or get a new recipe, let them all try (a little) a bit and get them to name the cocktail! That will be something nice for them and a little treat and not too serious.
You might ask what meals they feel go down well with the customers or what meals do not.
Ask them if there are any particular wines that they drink at home that should be included on your list.
Put a white board and pen for suggestions in the staff room and ask your staff to keep feeding back to you via the white board over the next few days.
