My Cat Barely A Year Old Got Out. When We Got Her Back Inside 3 Days Later Her Ears Were Swollen And Red. We Believed It Was An Ear Infection. She Had Them Before. Now She Stopped Eating Completely. Can You Help?

Call your local animal shelter to see if they run a low cost or income based veterinary clinic.  Some veterinary clinics will have payment plans available. 
I do not think the ear inflammation is related to the increased thirst and anorexia.  I would be concerned that she got into something toxic--whether a plant or farm chemical while out.  Acute (sudden) kidney disease often results in anorexia, increased thirst, often vomiting, and lethargy.  A less serious cause could be a severe urinary tract infection-though this is somewhat unlikely.
The ears may be related to mites, infection--bacteria, yeast, or both, or possibly an allergic reaction.
When cats stop eating they can develop a secondary problem with the liver called fatty liver disease.  This is a serious complication.
This cat needs veterinary attention.  At home you can try force feeding a canned food gruel and pedialyte.  Continue to offer water free choice.
