How Can You Cook A Chicken?

    There are many ways to cook a chicken.  It depends on what you want to do with it.  To roast:  Rinse out cavity, take giblets out of neck area.  They are usually in a little bag.  Save and roast with the bird if you want to make giblet gravy. (Giblets are: Heart, liver, gizzard.  If you have cats, boil them a little, chop us and give them to your cats).Rub the chicken with olive oil, and you can melt and mix spices into a half stick of butter, hold chicken up right, and lift the breast skin, then pour the butter/ spices under the skin. Roast at 375 degrees for an hour to an hour and a half, or until skin is nice and brown, and a leg practically falls off when you pull on it.  You can stuff the chicken before you roast it, and I baste mine every 30 minutes with juices.  I roast mine in a cast-iron skillet, but you can use a pyrex dish or a terra cotta baking oven, which you soak in water first. Cook the chicken breast up.  You can also boil the chicken if you want the meat and broth to make soup, tacos, burritos, soup. Rinse as above, cover chicken with water, add a couple of bay leaves and about a tbsp. Of minced garlic.  Be sure to save the broth, as you can use it to cook potatoes or rice with it.  Cook until tender, and meat falls off bone.  De-bone the chicken, and do what you want with the meat.  I'm going to answer this question twice, because there are a few more tricks I know.

    Use the broth, add a small can of tomato paste, a chopped carrot, a chopped onion, and some rice. Stir all together, simmer until liquid is absorbed, and rice is tender. Marinate in Italian dressing and grill. This is super good. The vinegar in the dressing tenderizes the meat, and cook on a grill, turning every few minutes, until a fork stuck in the thickest part of any of the pieces lets out a clear liquid. Bake it, barbegue in oven with barbeque sauce, or garlic & butter.

    The cooked rice above is Spanish rice, and you can use the de-boned chicken to make tacos. Then there's good ole' southern fried chicken. With a good amount of white flour and bread crumbs, any other spices you want to add...dip each piece of chicken into two whisked eggs, then into bag. Shake, shake, shake. Now put in hot oil (enough to cover the chicken), with just a tsp. Of lard added. Really. Cook until fork inserted into meat allows clear liquid, not pink, to run out.
