Water soluble vitamins as you said cannot be obtained in cooked in processed foods. It is because in cooking you use heat, heat alters the chemical composition of a food;changing also its chemical properties. Just in processed foods. It undergoes chemical properties which have done the same as with cooking.
That's why water-soluble vitamins can be obtained oftenly in fresh foods like fruits ^^

Water soluble vitamins easily dissolves in water so when raw food is processed or cooked for long time it looses its vitamins.

Water-soluble is just that. Breaks down in water. Once food is cooked or processed it, in essence, breaks down and removes the water-soluble vitamins. It is said that steaming your vegetables is better as it retains more of these water-soluble vitamins.
