Answer Question

Not yet you can't, if you keep reading this webpage blog.iphone-dev.org they will let you know as soon as it is available (The Ipod Dev team, are the creators of the jailbreaking software) so news will be released here first. Hope this helps.

Be Patient. Dev Teams are working very hard to try and find a way to jailbreak. Also, apple and itunes 9 prevent you from downgrading back to 3.0 so for now we are stuck

What the other dude said is wrong but also right dev team is working on a new jailbreak, but you can downgrade your ipod touch by restoring it with the 3.0 firmware

Yes you can, only if you have mac though NO WINDOWS YET! They are still working on windows so it should be out soon, hopefully.  I am waiting for the 3.1.1 jailbreak for the ipod touch 2g on windows.  I did downgrade my 3.1.1 firmware to 3.0 to see if I could jailbreak it and I did but it wouldn't let me do much so I got rid of it so I'm hoping that the 3.1.1 firmware jailbreak will work on my ipod touch.

You can downgrade from 3.1.1 to 3.0,
1.first download 2.1.1 from felixbrauns(google it youll know when you found it)
2.SHIFT+restore in itunes to bring up available firmware on your computer and locate 2.1.1
        3. Restore
        4. When done ,shift+ restore in itunes again, and now locate 3.0 firmware.
        5. Restore in itunes then rejailbreak using redsnow( i use 0.72, it doesnt freeze at all when jailbreaking on vista) and viola, downgraded and pwned!!!!
I know, it happened to me before
