    Scotch whisky is recognised as the original whisky and now has many imitators.  The best Scotch is 'single malt' which has not been blended.  It is matured in oak casks over many years to obtain its distinctive taste and aroma.  The term whisky can mean a drink made in the same way anywhere in the world.  It is said that it is the pure peaty highland water in Scotland that gives Scotch whisky its unique taste.

    Irish Whiskey is the original, whereas scotch whisky obviously came before American whiskey, or sour mash. The first licensed distillery in the world was the Bushmills distillery who still make fine, aged single malts that are generally smoother and less peaty than the Scottish versions. The word "whiskey" comes from the Irish "uisce beatha", which means "water of life". Slainte

      Scotch is simply a kind of whisky.  It usually gets its distinctive smoky taste from its mash (barley, malt, wheat, etc.) being roasted before fermentation.  Also, it is usually not charcoal filtered like its american cousin.  As pointed out elsewhere, scotch is either blended or is single-malt.
