How you differentiate one from the other may differ a little depending on the specific context in which you are using these concepts, but generally speaking you can differentiate the two by whether or not something adheres to traditional ways of doing things. Things that are conventional follow tradition and are fairly resistant to change, while things that are non-conventional are less likely to follow tradition and are, therefore, more open to change and progression.
