How Does PH Affect The Activity Of An Enzyme In An Apple?

    Well pH can either inhibit or help enzymes depending on whether the hydrogen bonds to an active site in an enzyme pocket.  I believe an apple coated in lemon juice (acid, lowers pH) will not brown in the open air due to the enzyme which causes browning becoming inhibited
