Why Does Everyone Talk About Yo Mama All The Time?

Because it's very offensive. If you want to disrespect someone the easiest way to pierce their heart is to talk about someone very dear to them and spiritually connected to them.
Think about it, if you talk about someones shoes, or hairstyle....that stuff can be easily changed.....but when you talk about somebody's mother....that can never be changed....its permanent.
In the urban community talking about someone's mother is commonly reffered to as "the easiest way to get knocked out" (unconscious).

It can be very offensive to some, but the thing is it only works if they think they got to you so shrug it off like it never happened.
