What Other Meats Go Well With Turkey?

    Being quite a dry meat, turkey is well set off by something richer and fattier. This is why sausagemeat-based stuffing is so popular with it. If you don't want sausage stuffing, cooking some small sausages like chipolatas and putting them round the bird is another good tradition. You can even wrap the sausages in bacon (or buy them ready wrapped.) for an actual joint of meat, some form of pork is still first choice because it's moist. Gammon is ideal, especially if you have a double oven, as you can put it in one oven at a very low temperature (preferably in a cooking pot with sweet cider) and just leave it there all morning. It doesn't overcook. If oven space is short, gammon is still very nice boiled in cider on the hob.
    A joint of pork is another possibility, though it might taste a bit dull against all the rich Christmas flavours. Beef or lamb don't go well with turkey.
