When the moisture and condensation from the bread is trapped inside a bag and is mixed with the heat of the room, along with the yeast that was used to make the bread, mold spores starts to multiply, these are perfect condition for mold to breed in; moisture, food, nourishment, heat and time.
There are a lot of air borne mold spores around us all of the time, not all of them are bad. Mold spores are in the air even as we inhale it in and when they land on areas with best condition for their growth they will grow and multiply.                                So after the bread is left to long the mold spores get bigger and go green causing uneatable food.
Hope it helps! (better than that other "answer")
