It is actually one of the dishes that Britain exports 'to' India. The dish was devised in Glasgow in the late 1960s. Chicken tikka masala or CTM as it is known is Britain's most popular 'Indian' style meal. There is no authentic recipe. In a survey by a well-known guide 48 versions were found. The only common ingredient seemed to be the chicken.
Chicken tikka is a Bangladeshi dish in which small pieces of chicken are cooked in a clay oven called a tandoor.
Masala means mixture of spices. The normal average mix for a CTM contains ginger, garlic tomatoes, butter and cream spiced with cardamom, cloves, cumin, nutmeg, mild red chilli powder, paprika fenugreek and turmeric.
It is the turmeric that impart the bright yellow colour although the synthetic die tartrazine is often substituted. It is this that make the curry stains so difficult to remove. CTM doesn't have a standard style or colour.
Former British foreign Secretary Robin Cook thought it the perfect British dish, not only because of its popularity but because it illustrated Britain's ability to adapt and absorb other influences.
