My Mom And I Are Having A Christmas Dinner At Our House, What Are Some Good And Easy Dishes To Make?

When we start cooking we want a variety of things not just plain old casual stuff.

    Buy a nice brisket, season it with all your favorites including a dash or two of liquid smoke, put it in an oven bag with slices of onion and celery tie the bag closed and pop it in the oven to bake. When its done slice and serve with the juices from the meat or shred it and make up some of your own special smoked sauce and serve it on a crusty bread roll. For sides make bar b que green beans. Open four cans of green beans, drain the liquid and put them in a baking dish or an oven pot. Add raw bacon slices or cut them into bite size pieces. The more bacon the better, your choice. Stir together one cup of ketchup and one cup of packed brown sugar. Add this to the green beans/bacon mix, cover tightly and bake at 300 degrees for about four hours. So good and can actually be done ahead and reheated. Scrub up some potatoes, pop them, un peeled, into the microwwave and cook until about half done. Cut the potatoes, with peel, into medium bite size pieces and pan fry them with a stick of butter and a little oil, to keep the butter from burning.   Top off with a cold, crispy slaw. If you serve the meat as a sandwich the slaw is good placed on the bread along with the meat and sauce. Dessert? A nice  scoop of warm peach cobbler over a big chunck of vanilla ice cream. Good eats!  Enjoy!

      There are plenty of good and easy dishes you can prepare on Christmas like Cheese Ball, Christmas Punch ,Christmas Quesadillas

        Asparagus if you can find it, quiche is fairly simple and delicious, I know a Mexican family who makes tamales for Christmas as a tradition but those are very difficult and take a lot of time.

        For the sprout hater....instead of boiling the sprouts, slice them and fry them in butter with onion and a little brown sugar (to caramelise the onion)....yummy!

          You and your mother can make a cheesecake,oreo cream pie,macroni salad.chop bbq make out of roast beef.

          At our house, we've made a tradition with Marlborough Pie. Really easy to make and after main course is done,just pop in oven while you're enjoying your family and guests. Made with applesauce,eggs and sugar. Do a google search for the recipe.You can use a store-bought graham cracker crust so this can be a rather quick dessert.

          For an appetizer:  Put 2 packages of cream cheese on a platter cover it with imitation crab meat (cut into small pieces) and cover that with coctail sauce.  Serve with crackers.
