If you are canning, you want to pour it in hot so that when you put the lid on and close it tightly the jar will vacuum seal as it cools. As the hot air in the jar cools it will try to shrink, creating the vacuum seal.

Also, it will keep the solution sterile so that you don't end up growing some kind of wierd fungus or bacteria.
