Note down the ingredients first; we need four large baking potatoes, 1/3 cup cream, 1/3 cup low fat buttermilk, salt and pepper, 1/3 cup light cream cheese, 1/4 cup 1 percent low-fat milk, one garlic clove (minced), one pinch nutmeg, one pinch pepper, half table spoon flour, one table spoon low-fat mayonnaise, one table spoon lemon juice, 3 table spoons Parmesan cheese, one green onion, sliced thin, one can of crab meat (drained), one can prawn, half cup cheddar cheese, thinly grated extra Parmesan cheese, for sprinkling.
After washing potatoes poke with a fork and then microwave till it gets tender and soft. Cut them in length wise and scoop out the center; and then place the scooped out centers into another pot and mash potato jointly with sour cream, buttermilk and salt and pepper. Then fill the potato shells with this filling and place it in casserole dish. Now for toping take a pan and put all other ingredients except meat and place it till the cream and cheese are no lumpier. Now mix in the mayonnaise, parmesan cheese and lemon juice and then remove from heat and collapse in crab meat and shrimp softly. Next, cover up and leave to chill to room temperature. Now apply this topping blend over the stuffed potatoes and dust with cheese and extra Parmesan cheese. Now cover up the dish with plastic cover and leave it in the fridge for the night. Pre-heat oven to 350 degrees F; bake twenty to thirty minutes till heated from side to side and topping is evenly browned.
