    A lobster is a salt water creature, just as salmon upon leaving the ocean to spawn in fresh water rivers and streams turn from a bright silver to a dark red after being in the fresh water for a certain period. There is a chemical reaction to the change in salinity and Ph. Because the lobster is also boiled the heat speeds up the reaction dramatically.
