My husband had an interview with 2 people for a job. He remembers the main person with whom he was scheduled to interview with, but he doesn't remember the name of the other person involved in the interview process. How do he address the thank-you note?

He can simply address him by thank you sir. There is nothing wrong in it, if you doesn't remember the name of that person.
