I would suggest the following destinations, the actual itinerary you take depends on your level of fitness and type of trip you're after.
Short Haul - One week plus trips:

Italy ~ Alps, Dolomites, Tuscany
Spain ~ Pyrenees, Picos D'Europa,
Morocco ~ Atlas Mountains, Jebel Sahro
Long Haul - Classic walks that you will never forget:
The High Level Route across the Pyrenees
The Tour de Mont Blanc
Everest Base Camp Trek, Nepal
The Annapurna Circuit, Nepal
If experienced you can either plan your own trip or go with an experienced operator that will arrange the whole thing for you.
