I like many different kinds of cheese for different times.
Most cheese is made by curdling the milk with rennett then cultured with micro-organisms such as bacteria.
Rennet is made from the stomach lining of baby cows.
I'll bet the first cheese was made by a baby cow and discovered by a starving man by luck.
Here's an excellent site that tells how to make your own cheese. This is cool because you can get drug free milk to make it. Most commercial dairys use drugs that you don't want to take.
