Can You Explain The Statement That Language Is Symbolic And Person Centered?

I am reading a book on language and I am not sure what it means.

    In a way all language is symbolic - ie, the word "fish" is a kind of symbol, like a picture of a fish but made with sounds. More exactly, symbolic language often means the language of ideas, abstract things rather than things you can see etc - fear, sorrow, approval and so on. Here is an articleyou might find helpful.

    People-centered language is language which focuses on the person rather than something about them or a problem they have. An example from psychiatric nursing is that you would talk about a person with a mental condition/illness, rather than a mentally ill person. That way, the person is more important than anything else.
