How Do I Know " Across The Grain"?

How can you tell if you are cutting across the grain on a London Broil?

If you look closely at your raw meat you can see faint lines running through the meat - these are known as the "grains" of the meat.  To cut across the grain of the meat you need to be cutting across the length of these lines not cut in the same direction as these lines do.

    Hope that helps.

The meat looks "stringy".  You slice totally perpendicular to "strands"
