    None unless you are cooking whatever you are putting into your sushi wrap then it wouldnt be called sushi since sushi means raw

      Rice vinegar is used in the actual rice of the sushi (or sashimi). To make classic sushi rice, you must mix rice vinegar with sugar and heat it until the sugar is melted...this makes the rice sticky.
