Gluten is a composite of two protein (gliaden and glutenin) and is found in grains like wheat, rye and barley. Gluten is the ingredient in wheat flour that gives bread it's elasticity and bagels their chewiness. Many people have celiac disease which causes them to be allergic to gluten-- that's why there are so many food products that are made to be gluten free.
