Start with spanish or vidalia onions - slice them so that you have nice big thin pieces
heat some olive oil, cook onions in olive oil until soft, add beef broth, if vegetarian
add vegetable broth - simmer for awhile - and whatever herbs you like with onions -
add miso for protein - no salt if you added miso- when ready put in individual bowls
cover with thick slice of crusty bread - add cheese put under broiler until cheese is melted and voila you now have french onion soup - if vegan omit cheese
