Lots of things! You can make chutneys, jams, jelly, honey, paste and much more. Quinces are a food of Europe, and trees can be found throughout Spain, France, Italy, the Middle East and Greece. The trees are easy to grow, but take some time.
It is best to pick quinces when the fruit is just starting to mature. When the quince is greenish-yellow, use it to make a jelly as it will contain more pectin at this stage.
You can add quince to pies and crumbles, and they go especially well with apples and pears. You can even add quince to meat dishes. If you wish to add it to a pork dish, simply combine quince paste, cinnamon, port and orange rind and stir them together until the paste melts. Leave the paste to simmer for 3 minutes and pour over some pork ribs and leave to soak for 1-2 hours.
