Wheat is a popularly cultivated grass which has originated from Levant area of Middle East. It is the second most produced food after Maize.

The origin of Wheat is said to be the Fertile Crescent in Southwest Asia. The site of domestication of wheat is considered as Diyarbakr in Turkey.

The cultivation and repeated harvesting of grains of wild grasses led to domestication of wheat. This happened through selection of mutant forms with tough ears which remained intact during harvesting.

It is said that wheat was domesticated in either PPNA Period 9800-8800 cal BC or early mid PPNB 8800-7500 Cal BC.
