I just roasted one last night. First be sure to sprinkle your spices such as salt & pepper, garlic powder etc all over the roast. Then brown (in a skillet) on all sides and the ends in a small amount of oil (extra virgin olive oil is best if you have it). After you take the roast out when browned, put a small amount of water or wine to deglaze the pan and to get all the drippings and chunks that will form from browning. Put in a roasting pan in a 400 degree oven with a meat thermometer in it along with the drippings w/ water. For a 2-4 pound roast it should take about 1-2 hours. I would check it in about 1.5 hours with a thermometer to be sure that it is done. Pork does not need to be extremely well done, but does need to be cooked thoroughly to avoid getting sick. When done, take out of the oven and cover it with foil for about 5 minutes to allow the juices to reabsorb into the meat so it will be juicy. Cut and enjoy with veggies and/or potatoes and rice. You can make a gravy out of the drippings to go with it with a little water and cornstarch to thicken it.
The other way to cook it is to do all the above but put it in a crock pot all day on low. It comes out really good and juicy without having to check it frequently. It will nearly fall apart and will be great with potatoes, veggies, or even just on a sandwich. Hope this helps

Yes!! The more you can keep it moist the better. I found that the crock pot is the best, but if you have a roasting pan and/or buy the Reynold's Roasting Bags and use them as directed, your roast will stay really really moist and taste wonderful!!! I have also recently "cheated and used a packaged instant mushroom/onion soup mix with my spices in the crock pot and it was extremely good. Use your imagination... It will be wonderful, just you see.
