What Is A Good Recipe For Beetroot In A Salad?

Here are few great salad recipes with beetroot:

Beetroot Salad (sweet)
225 g beetroot
225 g carrots

Dressing:
2 tbsp vinegar
75 ml olive oil
1 tsp Salt and pepper

Boil the beetroot until tender, then peel of the skin and chop medium slices, peel the carrots and then grate them. Mix the two and add the dressing to taste.  

CELERY AND BEETROOT SALAD

1 egg (hard boiled)
2 medium beetroot
3 sticks celery
4 tbsp olive oil
2 tbsp vinegar or lemon juice
Lettuce leaves to serve
