Your coolant does nothing until the car reaches a certain temperature.  For example the thermostat in my car is rated for 180 degrees.   Below this temperature the thermostat is closed and the coolant does not circulate.  I have driven a car with the radiator drained and everything was okay.  I only want around the block, and did not allow the engine to warm to operating temperature.  There was still coolant in my engine block, so the water pump was always submerged.  The only concern I would have is that if the water pump were to spin without coolant as a lubrication, it could cause damage to it.
