Don't know if your textured ceiling has foam pellets in it or just sprayed on to look like popcorn.
If it has the popcorn pellets in the compound, then it is probably more stable than if it is just joint compound sprayed to look like popcorn. Would suggest that you use at least a 2 inch nap roller for rough surfaces and lay the paint on without using a lot of pressure on the roller and be sure to keep plenty of paint on the roller at all times. If you push too hard while rolling or you do not have enough paint on the roller, it will pull the texture off.
If there are no pellets in the ceiling texture, would recommend that you have them sprayed by a professional.
If you do choose to paint your ceilings, it is good to buy quality ceiling paint such as Zinsser or Glidden.
