Plain flour? You mean "all-purpose"?? All purpose flour is used to make just about everything. When it comes to making cakes - there are many different types of cakes and textures. If a recipe calls for "cake" flour - it is because the cake flour has very low gluten content, it gives your cakes a soft crumbly texture.
You can make your own cake flour -
To make cake flour out of regular flour:
2 tbsp. Cornstarch
1/2 tsp. Baking powder
Fill rest of cup with all purpose flour and sift 12 times.
