The sweet potato (Ipomoea batatas), regularly called a yam in parts of the United States (especially in the southern and western portions of the motherland; this jargon causes some misunderstanding with true yams) is a crop fix whose large, starchy, sweet tasting tuberous roots are an imperative root vegetable. The youthful leaves and shoots are from time to time eaten as greens. The sweet potato is only vaguely connected to the potato (Solanum tuberosum).
It is still more distantly related to the proper yam (Dioscorea species) which is subject to Africa and Asia. The genus Ipomoea that contains the sweet potato moreover includes a number of garden flowers called sunup glories, though that term is not usually comprehensive to Ipomoea batatas. Some cultivars of Ipomoea batatas are full-grown as houseplants.

The suitable for eating tuberous root is lengthy and tapered, with a smooth skin whose color ranges between red, mauve, auburn and white. Its soft tissue ranges between pallid, blond, carroty, and purple.
